Home Made Ramen

I made this soup the other night after a longer-than-usual workday at the hospital. It's based on a recipe for broth that I found in the "Nigella Express" cookbook by Nigella Lawson. Although packages of plain ramen noodles are readily available in my neighborhood, I didn't have any in my pantry at the moment, so I used capellini and they worked out well. It's pretty delicious.


3 cups organic chicken broth
1 tsp minced fresh ginger
2 Tbs. soy sauce
1 tsp. dark brown sugar

1 pinch of dried wakame
1/2 cup chopped baby bok choy
4 shiitake mushrooms, sliced
1 cup snow peas
about 1/4 of a package of capellini (~ 2 fistfuls)

Combine all ingredients for the broth, and bring to a boil.

Add the capellini.

When the capellini are cooked through, add the remaining add-ins, boil for about 3 more minutes.
